Quinoa Granola

4 fat, 2 grain, 3 protein

1/2 cup uncooked quinoa  [1 protein, 2 grain, 1/2 fat]

1/2 cup nuts [2 protein, 2 fat]

2 tbsp. shredded coconut [1 fat]

1 tbsp. ground flaxseed [1/2 fat]

2 tbsp. applesauce

1 tsp cinnamon

pinch of salt

1 packet stevia

>>Wash and soak uncooked quinoa for 5-6 hours. Rinse and press dry to remove access water.

Combine flaxseed, applesauce, and stevia. Separately mix the other ingredients. Combine all together and spread onto baking sheet. Bake 20-25 min @ 350F. Stir halfway through baking.
